Strawberry liqueur

500g fresh strawberries, washed, hulled and bad bits removed, and cut into pieces.
750 ml vodka or cane spirit
10 whole peppercorns
1 c white sugar

Freeze strawberry bits overnight. It breaks down the cell structure within the fruit.
Put frozen strawberry bits, peppercorns and sugar in a glass jar. Add the bottle of alcohol and mix through.
Leave in a dark, warm place for a weekend, stirring every few hours.
Strain and pour into clean glass bottles. Mature in fridge for about 6 weeks.
